rendang

Padang's signature meat dish

Rendang is a rich Indonesian dish of meat—typically beef—slow-cooked in coconut milk and a paste of spices including galangal, lemongrass, garlic, and chili.

The long cooking process allows the liquid to evaporate and the meat to absorb the spices, producing tender, deeply flavored pieces coated in a dark, caramelized sauce.

Originating from the Minangkabau people of West Sumatra, rendang is now served throughout Southeast Asia: beef rendang with rice, The rendang was so tender it fell apart.
