palm sugar

Tropical tree syrup

Palm sugar is a sweetener made from the sap of various palm trees, especially the coconut palm and date palm.

The sap is boiled down to produce a granulated or block sugar with a caramel-like flavor.

Common in Southeast Asian and Indian cooking, it's less refined than white sugar: The recipe calls for palm sugar, but you can substitute brown sugar.
