coriander

Chinese parsley plant

Coriander is an herb whose leaves and seeds are used in cooking.

The plant is also called cilantro, though in American usage coriander typically refers to the dried seeds while cilantro means the fresh leaves.

The seeds have a warm, citrusy flavor used in curries, pickling, and baking: toast the coriander before grinding.

The leaves are pungent and polarizing—some people taste soap.
