rind

Cheese's outer layer

Rind is the tough outer layer of certain foods—the skin of citrus fruits, the exterior of cheese, the casing around bacon.

Unlike peel, which suggests easy removal, rind implies something thicker and less edible: Don't eat the rind of that brie.

Watermelon has a rind; apples have skin.
