Saffron-tinted skillet meal
Paella is a Spanish rice dish cooked in a wide, shallow pan—also called a paella.
The rice absorbs flavors from saffron, olive oil, and whatever else goes in: traditionally rabbit, chicken, or seafood, along with vegetables.
The prized part is the socarrat, the crispy rice crust at the bottom.
