adobo
Filipino soy braise
Adobo names two distinct culinary traditions.
In Filipino cooking, adobo is a braised dish of meat (usually chicken or pork) simmered in vinegar, soy sauce, garlic, and bay leaves: chicken adobo with rice.
In Spanish and Latin American cooking, adobo is a paste or sauce of chiles, vinegar, and spices used as a marinade or seasoning: chipotles in adobo.
