galangal

Southeast Asian spice

Galangal is a rhizome used in Southeast Asian cooking, similar in appearance to ginger but with a sharper, more peppery flavor and piney notes.

It appears in Thai curries, soups like tom yum, and Indonesian dishes: The recipe calls for fresh galangal, but dried works in a pinch.

Two main varieties exist—greater and lesser galangal—with the greater being more common in Western markets.
