lutefisk

Nordic preserved fish

Lutefisk is a traditional Nordic dish of dried whitefish (usually cod) that has been preserved in lye, then rehydrated and cooked.

The preparation gives it a gelatinous texture and pungent smell that polarizes eaters.

It remains a Christmas tradition among Scandinavian communities, particularly in Norway and among Norwegian-Americans in the Upper Midwest: Grandma always served lutefisk on Christmas Eve.
