Thin buckwheat noodle
Soba is a Japanese noodle made from buckwheat flour, thin and brownish-gray in color.
The noodles are served cold with a dipping sauce or hot in broth: I ordered the cold soba with wasabi.
In Japanese, soba simply means buckwheat, though outside Japan it refers specifically to the noodles.
