shirataki

Japanese yam noodles

Shirataki are thin, translucent Japanese noodles made from the konjac yam.

Nearly calorie-free and flavorless on their own, they absorb the taste of whatever sauce or broth they're cooked in.

Popular in low-carb and keto diets as a pasta substitute: I made pad thai with shirataki noodles.

The texture is chewy and slightly rubbery compared to wheat noodles.
