gyoza

Pan-fried crescent pockets

Gyoza are Japanese dumplings, typically crescent-shaped with thin wheat wrappers crimped along one edge, filled with seasoned ground pork and cabbage.

They're usually pan-fried to create a crispy bottom while the top steams tender: We ordered gyoza as an appetizer.

The word comes from Chinese, where similar dumplings are called jiaozi.
