shoyu ramen

Japanese soy soup

Shoyu ramen is a Japanese noodle soup with a soy sauce-based broth, typically made with chicken or pork stock.

The broth is clear and brown, lighter than miso ramen but more savory than shio (salt-based) varieties.

Shoyu is the most traditional style of ramen, originating in Tokyo: I'll have the shoyu ramen with extra chashu.
