buckwheat
Groats despite misnomer
Buckwheat is a plant cultivated for its edible seeds, which despite the name is not a wheat or even a grain—it's related to rhubarb.
The seeds are ground into flour for pancakes, soba noodles, and blinis, or eaten whole as groats (kasha).
Buckwheat has a distinctive earthy, nutty flavor and is naturally gluten-free.
