oxtail

Stew meat cut

Oxtail is the tail of cattle, sold as a cut of meat.

Rich in collagen and gelatin, it becomes tender and flavorful when braised or stewed slowly: oxtail soup, Jamaican oxtail.

The name persists from when oxen were the primary source, though modern oxtail comes from any beef cattle.
