amatriciana

Tomato guanciale sauce

Amatriciana is a Roman pasta sauce made with guanciale (cured pork cheek), tomatoes, pecorino cheese, and black pepper.

The dish takes its name from Amatrice, a town northeast of Rome.

It's typically served with bucatini or spaghetti: We ordered the bucatini all'amatriciana.

The sauce is sometimes confused with carbonara, which uses egg instead of tomato.
