carbonara

Roman egg pasta

Carbonara is an Italian pasta sauce made from egg yolks, hard cheese (usually Pecorino Romano), cured pork (guanciale or pancetta), and black pepper.

The eggs are tempered by the hot pasta to create a creamy coating without scrambling: I'll have the spaghetti carbonara.

The dish originated in Rome and remains associated with Roman cuisine.
