braise

Sear then stew

Braise is a cooking method that combines dry and wet heat: food is first seared at high temperature, then slowly cooked in a covered pot with liquid.

The technique transforms tough cuts of meat into tender dishes: braised short ribs, braised lamb shanks.

Vegetables can also be braised: braised cabbage, braised fennel.
