hotpot
Communal bubbling meal
Hotpot is a communal cooking method where diners simmer raw ingredients—thinly sliced meat, vegetables, tofu, noodles—in a shared pot of simmering broth at the table.
The dish originated in East Asia and varies by region: Sichuan hotpot features a fiery, numbing broth, while Cantonese versions are milder.
In British English, hotpot (or hot pot) refers to a different dish entirely—a slow-cooked casserole of meat and vegetables topped with sliced potatoes, associated with Lancashire: a lamb hotpot.
