parkin

Oatmeal treacle cake

Parkin is a traditional British cake made with oatmeal, treacle or molasses, and ginger, associated especially with Yorkshire and the North of England.

Dense, sticky, and spiced, it's traditionally eaten around Bonfire Night in early November: We always have parkin on Guy Fawkes Night.

The cake improves with keeping, becoming stickier over several days.
