ceviche

Lime-cooked raw fish

Ceviche is a Latin American dish of raw fish or seafood cured in citrus juice, typically lime or lemon.

The acid denatures the proteins, giving the fish a firm, opaque texture similar to cooking.

Usually mixed with onions, cilantro, and chili peppers, ceviche is served cold as an appetizer: We ordered ceviche and margaritas.

Also spelled seviche or cebiche.
