masa
Lime-treated cornmeal
Masa is corn dough used in Mexican and Central American cooking, made from dried corn kernels treated with lime water (a process called nixtamalization) and then ground.
It forms the base for tortillas, tamales, pupusas, and other staples: She pressed the masa into thin rounds for fresh tortillas.
Masa harina is the dried flour form, reconstituted with water.
