tomatillo

Husked green fruit

A tomatillo is a small, round, green fruit enclosed in a papery husk, used in Mexican cooking.

Related to tomatoes but tart rather than sweet, tomatillos are the base of salsa verde and various sauces.

The husk is removed before cooking: Peel the tomatillos and roast them until slightly charred.
