mofongo
Puerto Rican plantains
Mofongo is a Puerto Rican dish of fried green plantains mashed with garlic, olive oil, and pork cracklings, typically shaped into a mound or ball.
It's often served as a side or stuffed with meat, seafood, or vegetables: The restaurant's shrimp mofongo was incredible.
The dish has African roots and remains a staple of Caribbean cuisine.
