barbacoa

Mexican slow-roasted beef

Barbacoa is a method of slow-cooking meat over an open fire or in a pit, originating in the Caribbean and Mexico.

The meat—traditionally beef cheeks, goat, or lamb—is wrapped and steamed for hours until tender and shreddable.

In Mexican-American cuisine, barbacoa usually means seasoned beef for tacos: We're getting barbacoa tacos for lunch.

The word is the source of English *barbecue*.
