achiote

Latin American colorant

Achiote is a tropical American shrub whose seeds yield a red-orange pigment used as a coloring and flavoring in Latin American, Caribbean, and Filipino cooking.

The seeds are often ground into a paste or infused in oil: The pork was marinated in achiote paste.

Also called annatto.
