teppanyaki

Tableside iron cooking

Teppanyaki is a style of Japanese cooking in which food—typically meat, seafood, and vegetables—is prepared on a large iron griddle.

In Western restaurants, teppanyaki often involves theatrical presentation, with chefs performing knife tricks and cooking directly in front of diners.

We sat around the teppanyaki grill and watched the chef flip shrimp into his hat.

The word comes from Japanese words for iron plate and grilled.
