menudo
Spicy tripe broth
Menudo is a traditional Mexican soup made with beef stomach (tripe) in a red chile pepper broth, often including hominy.
It's considered a comfort food and folk remedy for hangovers, traditionally served on weekends and special occasions: We had menudo after the wedding.
The dish requires hours of slow cooking to tenderize the tripe. (Capitalized Menudo was a Puerto Rican boy band.)
