stir-frying

Hot wok technique

Stir-frying is a cooking technique where ingredients are rapidly cooked in a small amount of very hot oil while being continuously stirred or tossed.

The method originated in Chinese cuisine and typically uses a wok.

The high heat and constant motion cook food quickly while preserving texture and color: Stir-frying the vegetables keeps them crisp.
