polyunsaturated
Multiple double bonds
Polyunsaturated describes fats and oils containing multiple double bonds between carbon atoms in their molecular chains.
These fats, found in fish, nuts, and vegetable oils like corn and sunflower, are generally considered healthier than saturated fats: Switch to polyunsaturated cooking oils.
The term contrasts with monounsaturated (one double bond) and saturated (none).
