unsaturation
Not fully hydrogenated
Unsaturation is a chemistry term for the state of having fewer hydrogen atoms than a saturated compound would have—typically because carbon atoms form double or triple bonds with each other instead of bonding to hydrogen.
Fats and oils are described by their degree of unsaturation: saturated fats have no double bonds, while unsaturated fats have one or more.
