ester

Acid-alcohol reaction product

An ester is a chemical compound formed when an acid reacts with an alcohol, releasing water.

Esters are responsible for many fruity and floral aromas—the smell of bananas, pineapples, and jasmine comes from esters.

They appear in fats, oils, and many synthetic materials: Polyester is made from ester linkages.

The term also applies broadly in organic chemistry to similar compounds. (Capitalized Ester is a given name.)
