pan-fry

Cook in oil

To pan-fry is to cook food in a shallow layer of hot fat or oil in a skillet or frying pan.

Unlike deep-frying, where food is submerged, pan-frying uses just enough oil to coat the bottom of the pan: Pan-fry the chicken until golden brown on both sides.

The technique produces a crispy exterior while keeping the inside moist.
