Falafel's main ingredient
Chickpeas are round, beige legumes with a firm texture and nutty flavor, used widely in Mediterranean and Middle Eastern cooking.
They're the base for hummus and falafel, and appear in salads, stews, and curries.
Also called garbanzo beans, especially in American supermarkets.
I roasted the chickpeas with cumin and olive oil.
