pinto beans

Mottled soup beans

Pinto beans are a variety of common bean with mottled pink and brown skin that turns solid brown when cooked.

A staple in Mexican and Southwestern American cooking, they're the beans in most refried beans and many chilis: She simmered pinto beans with ham hocks.

The name comes from Spanish for "painted," describing their speckled appearance.
