aquafaba

Vegan egg substitute

Aquafaba is the viscous liquid from cooked chickpeas—the brine you'd otherwise drain from a can.

It mimics egg whites when whipped, making it useful in vegan cooking for meringues, mayonnaise, and cocktails: She made a chocolate mousse using aquafaba instead of eggs.

The name combines Latin words for water and bean.
