adobo sauce
Tangy pepper marinade
Adobo sauce is a tangy, slightly sweet chili sauce common in Mexican cooking, made from ground dried peppers (typically chipotle or ancho), vinegar, garlic, and spices.
It often comes canned with chipotle peppers packed in it: I added a spoonful of adobo sauce to the marinade.
The term shares a name with Filipino adobo, a completely different dish of meat braised in vinegar and soy sauce.
