Tequila is a Mexican spirit distilled from the fermented juice of the blue agave plant.
By law, authentic tequila must be produced in specific regions of Mexico, primarily around the town of Tequila in Jalisco.
It ranges from clear (*blanco*) to aged varieties (*reposado*, *añejo*) that rest in oak barrels.
Tequila is the base of the margarita and is traditionally drunk neat with salt and lime: We did tequila shots after midnight.
