terroir
Land's flavor signature
Terroir is the complete natural environment in which wine or other agricultural products are produced—the soil, climate, topography, and surrounding vegetation that give a product its distinctive character.
The concept is central to French winemaking philosophy, where wines from specific regions are valued for expressing their terroir: You can taste the terroir in this Burgundy.
The term has expanded beyond wine to coffee, cheese, and other foods where place of origin affects flavor.
