char siu

Red lacquered meat

Char siu is Chinese barbecued pork, typically made from boneless cuts marinated in a sweet mixture of honey, five-spice, soy sauce, and hoisin, then roasted until the edges caramelize to a sticky, lacquered red.

It appears sliced over rice, stuffed in steamed buns, or chopped into fried rice and noodle dishes: char siu bao, a plate of char siu with rice.
