pork shoulder

Swine upper limb

Pork shoulder is a cut of meat from the upper foreleg and shoulder blade area of a pig.

It's tougher than loin cuts but becomes tender and flavorful when cooked slowly—ideal for pulled pork, carnitas, and braised dishes.

Also called Boston butt or pork butt, despite coming from nowhere near the rear of the animal.
