maltose

Beer's natural carbohydrate

Maltose is a sugar formed when starch breaks down, as happens during digestion or the germination of grain.

It consists of two glucose molecules bonded together and is less sweet than table sugar.

Maltose is particularly important in brewing and distilling, where enzymes convert grain starches into this fermentable sugar.

The maltose in the wort provides food for the yeast during fermentation.
