roux

Cooked butter-flour blend

A roux is a mixture of fat and flour cooked together, used to thicken sauces, soups, and gravies.

The fat—usually butter—is melted, flour is stirred in, and the mixture is cooked to varying degrees: a white roux for béchamel, a blonde roux for velouté, a dark roux for gumbo.

Start with a roux and build the sauce from there.
