baby bok choy

Small Asian green

Baby bok choy is a small variety of the Chinese cabbage, harvested young when the leaves are tender and the white stalks are crisp.

It cooks quickly and appears whole or halved in stir-fries and soups: I sautéed the baby bok choy with garlic and soy sauce.

The mild flavor is slightly sweeter than mature bok choy.
