collard greens
Leafy soul food
Collard greens are leafy vegetables with large, dark green leaves and tough stems, traditionally slow-cooked in Southern American cuisine.
Often simmered with smoked meat and served alongside cornbread: Grandma's collard greens were the best part of Sunday dinner.
The leaves have a slightly bitter, earthy flavor that mellows with cooking.
Usually called simply collards.
