tubers

Swollen subterranean stems

Tubers are thickened underground plant structures that store nutrients—potatoes and yams being the most familiar examples.

They develop from stems or roots and allow plants to survive dormant periods.

Unlike bulbs, tubers lack the layered structure of onions.

The word sometimes extends loosely to any starchy root vegetable: a bin of tubers at the farmers market.
