chitting
Encouraging early germination
Chitting is the practice of encouraging seed potatoes to sprout before planting.
Gardeners place potatoes in a cool, light spot for several weeks until short shoots (chits) emerge from the eyes: Start chitting your potatoes in late winter for an earlier harvest.
The technique gives plants a head start on the growing season.
