sunchoke
Knobby sunflower root
A sunchoke is the edible tuber of a North American sunflower species, with knobby brown skin and crisp white flesh.
The flavor is nutty and slightly sweet, often compared to artichoke—hence its other name, Jerusalem artichoke.
Sunchokes can be eaten raw or cooked: roasted sunchokes with garlic, shaved sunchoke salad.
