arrowroot

Rhizome-derived starch

Arrowroot is a starchy powder extracted from the rhizomes of tropical plants, used as a thickening agent in cooking.

It produces a clearer, more delicate gel than cornstarch and works at lower temperatures, making it useful for sauces and puddings: Thicken the glaze with a tablespoon of arrowroot.

The plant itself is also called arrowroot.
