pot-au-feu

French simmered supper

Pot-au-feu is a traditional French boiled dinner—beef and vegetables simmered slowly in broth.

The dish is rustic home cooking, not restaurant fare, typically served in two courses: the broth first, then the meat and vegetables.

The name translates literally as "pot on the fire." We spent Sunday afternoon making pot-au-feu.
