olla

Clay cooking vessel

An olla is a wide-mouthed earthenware pot or jar, used traditionally in Spanish-speaking cultures for cooking or storing water.

The porous clay keeps water cool through evaporation.

In the American Southwest, ollas appear in both archaeological contexts and contemporary gardens, where they're buried to slowly irrigate plant roots: She filled the olla before the weekend trip.
